About
Chef Marc

Hospitality and stewardship

Marc opened his first restaurant in 2008, the highly-acclaimed Tribeca-favorite, Restaurant Marc Forgione. He is proud to have created an approachable restaurant that “people walk by and are compelled to enter and where the ingredients are the star." The restaurant has earned a number of accolades including consecutive Michelin stars, a two-star review from The New York Times, and “Key Newcomer” from Zagat Guide, among others. As chef and owner Marc received Star Chefs’ “Rising Star of the Year” award.

In 2024 the restaurant will move into its new home, just around the corner from the original, helping to ensure the iconic 30 Hudson space remains a restaurant.

In 2020, Marc took over beloved Nolita favorite Peasant, the wood-fired Italian restaurant that has been a downtown NYC fixture for more than 20 years.

Originally opened by chef Frank DeCarlo in 1999, Peasant was Marc's favorite local spot as a longtime resident of NYC’s Nolita neighborhood.

When Frank was ready to retire, he asked Marc to take over the restaurant, and Marc jumped at the chance to keep the spirit of the beloved restaurant alive. Marc’s menu is an ode to simple, rustic wood-fired Italian cooking and uses seasonal, local, and thoughtfully sourced ingredients.

Trattoria One Fifth in Greenwich Village is the newest member of the Respect family.

This restaurant is also located in an iconic building with a rich restaurant history. Trattoria One Fifth’s special pizza dough, perfected by Chef Marc, has the structure and crunch of a NY slice with the focus on technique and ingredients of Neapolitan style.

Housemade tarts and gelato are just a couple of the stars on Trattoria One Fifth’s incredible dessert menu.

Marc is known for his role on Food Network as one of seven Iron Chefs on “Iron Chef America.” He is also a partner of New York City’s Laotian hotspot Khe-Yo, and author of “Marc Forgione: Recipes and Stories from the Acclaimed Chef and Restaurant.” Marc donates his time to a number of charitable organizations, acting as a Chef Ambassador for Chefs for Kids Cancer, City Harvest, and Feeding America.

In 2022, Marc partnered with innovative hospitality firm Apres Cru to launch RESPECT Hospitality and help realize his vision for his restaurants as well as pursue new opportunities.

Marc is focused on creating a culture of respect in his restaurants and at home with his son. His hope is that respect is contagious.
